Cooking Tips:
- Let it rest: Pull your steak out of the fridge 30 minutes before cooking to bring it to room temp for even cooking.
- Season simply: A generous sprinkle of coarse salt and cracked black pepper is all you need to let the beef shine.
- High heat is key: For grilling, preheat to high (around 450°F) to get a nice sear. For pan-searing, use a cast-iron skillet with a bit of oil until it’s smoking hot.
- Don’t overflip: Sear each side for 3-4 minutes for medium-rare (135°F internal temp). Flip only once to lock in those juices.
- Rest before slicing: Let the steak sit for 5 minutes after cooking to keep it juicy.
